  • 4 cups sweet potatoes, peeled and cubed
  • 1 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 tablespoon apple cider vinegar
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup chopped green onions

Instructions 

  1. 1. Boil the sweet potatoes in a pot of salted water until tender, about 15 minutes. Drain and let cool.
  2. 2. In a mixing bowl, combine mayonnaise, Dijon mustard, apple cider vinegar, salt, and black pepper.
  3. 3. Add the cooled sweet potatoes and chopped green onions to the bowl. Mix well to combine.
  4. 4. Chill in the refrigerator for at least 1 hour before serving.
