Ingredients

  • 1 lb Ground Beef
  • 1 can Pinto Beans drained and rinsed
  • 1 can Corn drained
  • 1 can Diced Tomatoes
  • 1 cup Beef Broth
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 teaspoon Chili Powder
  • 1 teaspoon Cumin
  • to taste Salt and Pepper

Instructions 

  1. 1. In a large pot, brown the ground beef over medium heat. Drain any excess fat.
  2. 2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
  3. 3. Stir in the chili powder and cumin, cooking for another minute.
  4. 4. Add the pinto beans, corn, diced tomatoes, and beef broth to the pot. Stir to combine.
  5. 5. Bring the stew to a boil, then reduce the heat and let it simmer for about 30 minutes.
  6. 6. Season with salt and pepper to taste. Serve hot.
