Ingredients 

Main Ingredients

  • 2 medium beets peeled and grated
  • 1 medium carrot peeled and grated
  • 1 medium onion chopped
  • 3 cups cabbage shredded
  • 3 medium potatoes peeled and cubed
  • 6 cups beef broth
  • 2 tablespoon tomato paste
  • 2 cloves garlic minced
  • 2 tablespoon vegetable oil
  • to taste salt and pepper
  • 1 tablespoon vinegar
  • to serve sour cream
  • to serve fresh dill chopped

Instructions 

  1. 1. Heat the vegetable oil in a large pot over medium heat. Add the onion and cook until soft.
  2. 2. Stir in the beets, carrots, and tomato paste. Cook for about 10 minutes.
  3. 3. Add the cabbage, potatoes, and beef broth. Bring to a boil, then reduce heat and simmer for 30 minutes.
  4. 4. Add the garlic, vinegar, salt, and pepper. Simmer for another 10 minutes.
  5. 5. Serve hot, garnished with a dollop of sour cream and a sprinkle of fresh dill.
