Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 sweet potato, peeled and cubed
  • 1 cup diced tomatoes
  • 4 cups vegetable broth
  • ½ cup peanut butter
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ¼ teaspoon cayenne pepper
  • to taste salt and pepper
  • 1 cup kale, chopped
  • ¼ cup chopped peanuts (for garnish)

Instructions 

  1. Heat the olive oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.
  2. Add the garlic and red bell pepper, and cook for another 2-3 minutes.
  3. Add the sweet potato, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the sweet potatoes are tender.
  4. Stir in the peanut butter, cumin, coriander, and cayenne pepper. Season with salt and pepper to taste. Simmer for another 5 minutes.
  5. Add the chopped kale and cook until wilted, about 2-3 minutes.
  6. Serve hot, garnished with chopped peanuts.
