Ingredients

  • 2 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 red bell pepper, chopped
  • 1 sweet potato, peeled and cubed
  • 1 can diced tomatoes (14.5 oz)
  • ½ cup peanut butter
  • 4 cups vegetable broth
  • 1 can chickpeas, drained and rinsed (15 oz)
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ¼ teaspoon cayenne pepper
  • Salt and pepper to taste
  • 2 cups chopped kale or spinach
  • ¼ cup chopped peanuts (for garnish)
  • Fresh cilantro (for garnish)

Instructions 

  1. Heat oil in a large pot over medium heat. Add onion, garlic, and ginger. Sauté until fragrant.
  2. Add bell pepper and sweet potato. Cook for a few minutes.
  3. Stir in diced tomatoes, peanut butter, and vegetable broth. Bring to a boil.
  4. Add chickpeas, cumin, coriander, cayenne, salt, and pepper. Reduce heat and simmer for 20 minutes.
  5. Stir in kale or spinach. Cook until wilted.
  6. Serve hot, garnished with chopped peanuts and fresh cilantro.
