Ingredients 

Main Ingredients

  • 2 cups Grated Zucchini
  • 1 cup Sugar
  • 2 cups All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt
  • 1 teaspoon Ground Cinnamon
  • ½ cup Vegetable Oil
  • 2 large Eggs
  • 2 teaspoon Vanilla Extract

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
  2. In a large bowl, beat the eggs. Add sugar and vanilla, and mix well.
  3. Stir in grated zucchini and then the melted butter. Combine the flour, baking soda, baking powder, salt, and cinnamon, and sift this into the zucchini mixture. Mix until just combined.
  4. Pour the batter into the prepared loaf pan. Bake for 60 minutes, or until a tester inserted into the center comes out clean.
  5. Cool in the pan on a rack for 20 minutes. Remove from pan, and completely cool.
