Main Ingredients
- 1 lb Italian sausage mild or spicy
- 4 cups Chicken broth
- 3 cups Kale chopped
- 4 cups Potatoes diced
- 1 cup Heavy cream
- 1 medium Onion diced
- 3 cloves Garlic minced
- to taste Salt and pepper
1. In a large pot, cook the sausage over medium heat until browned. Remove and set aside.
2. In the same pot, add the diced onion and cook until translucent. Add the minced garlic and cook for another minute.
3. Add the chicken broth and bring to a boil. Add the diced potatoes and cook until tender, about 10 minutes.
4. Add the cooked sausage back to the pot along with the chopped kale. Cook until the kale is wilted, about 5 minutes.
5. Stir in the heavy cream and season with salt and pepper to taste. Serve hot.
