Ingredients

  • 1 large eggplant sliced into rounds
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 4 slices bread toasted
  • 1 cup lettuce shredded
  • 1 large tomato sliced
  • ½ cup mayonnaise

Instructions 

  1. 1. Preheat the grill pan over medium heat.
  2. 2. Brush the eggplant slices with olive oil and season with salt and pepper.
  3. 3. Grill the eggplant slices for about 5 minutes on each side, until tender and grill marks appear.
  4. 4. Toast the bread slices until golden brown.
  5. 5. Spread mayonnaise on one side of each toasted bread slice.
  6. 6. Layer the grilled eggplant, shredded lettuce, and tomato slices on two of the bread slices.
  7. 7. Top with the remaining bread slices, mayonnaise side down.
  8. 8. Cut the sandwiches in half and serve immediately.
