Ingredients 

Main Ingredients

  • 1 cup Red Lentils
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 2 cups Vegetable Broth
  • 1 cup Diced Tomatoes
  • 1 teaspoon Cumin
  • 1 teaspoon Turmeric
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 2 tablespoon Olive Oil

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat.
  2. 2. Add the chopped onion and garlic, and sauté until softened.
  3. 3. Add the cumin and turmeric, and cook for another minute.
  4. 4. Add the red lentils, vegetable broth, and diced tomatoes. Bring to a boil.
  5. 5. Reduce heat and simmer for 20-25 minutes, until lentils are tender.
  6. 6. Season with salt and pepper to taste. Serve hot.
